Preparation
- Cut the broccoli into small bite-sized pieces.
- In your crock pot, toss in the diced broccoli, butter, onion, celery, minced garlic, salt, and pepper.
Mixing
- In a separate bowl, combine the chicken broth with the cornstarch, stirring until blended. Then pour this mixture into the crock pot over the veggies.
Cooking
- Cover and cook on low for 4-6 hours.
- After the cooking time, gently stir in the heavy cream and shredded cheddar cheese. Cover and cook on high for an additional 30 minutes.
Serving
- Right before serving, give everything a good stir to blend those cheesy flavors beautifully.

Time-saving trick: Chop your veggies the night before. If your soup ends up too thick, whisk in more chicken broth when reheating. Add a pinch of smoked paprika or nutmeg for an unexpected twist.
