Method
Cooking the Sausage
- In a skillet, heat your stove to medium. Add the Italian sausage, breaking it up with a spoon. Cook until it turns a golden brown (around 5-7 minutes). Drain excess fat and transfer to the crockpot.
Adding Vegetables
- Add the chopped onion and minced garlic to the crockpot with the sausage. Stir well to combine.
Mixing Sauces
- Add the diced tomatoes, tomato sauce, chicken broth, dried basil, dried oregano, salt, and pepper to the crockpot. Stir gently to mix.
Setting to Cook
- Cover the crockpot and cook on low for 5-6 hours or on high for 3-4 hours.
Final Touches
- About 30 minutes before serving, add the cheese tortellini and fresh spinach. Pour in the heavy cream and mix together.
Serving
- Once the tortellini is tender and the spinach cooked down, serve in bowls and top with grated Parmesan cheese.
Notes
For time-saving, prepare ingredients the night before. If the dish is too thick, add more chicken broth before serving. Experiment with a splash of white wine for flavor variation.
