Method
 

Cooking the Sausage
  1. In a skillet, heat your stove to medium. Add the Italian sausage, breaking it up with a spoon. Cook until it turns a golden brown (around 5-7 minutes). Drain excess fat and transfer to the crockpot.
Adding Vegetables
  1. Add the chopped onion and minced garlic to the crockpot with the sausage. Stir well to combine.
Mixing Sauces
  1. Add the diced tomatoes, tomato sauce, chicken broth, dried basil, dried oregano, salt, and pepper to the crockpot. Stir gently to mix.
Setting to Cook
  1. Cover the crockpot and cook on low for 5-6 hours or on high for 3-4 hours.
Final Touches
  1. About 30 minutes before serving, add the cheese tortellini and fresh spinach. Pour in the heavy cream and mix together.
Serving
  1. Once the tortellini is tender and the spinach cooked down, serve in bowls and top with grated Parmesan cheese.

Notes

For time-saving, prepare ingredients the night before. If the dish is too thick, add more chicken broth before serving. Experiment with a splash of white wine for flavor variation.
