  • 1 teaspoon baking soda This will help them puff up just right.
  • 1/2 teaspoon baking powder Adds a little extra rise.
Wet Ingredients
  • 1 cup unsalted butter, softened Unsalted helps to control the saltiness for the perfect balance.
  • 1 1/2 cups white sugar The star ingredient for sweetness!
  • 1 egg Brings everything together.
  • 1 teaspoon vanilla extract For that warm, familiar flavor.
  • 1/2 teaspoon almond extract A delightful twist that adds depth.
For Rolling
  • 1 cup sugar This gives the cookies their lovely sparkle.

Method

Preparation
  1. Preheat the oven to 375°F (190°C).
  2. In a small bowl, stir together the flour, baking soda, and baking powder.
  3. In a large bowl, beat together the softened butter and sugar until creamy and smooth.
  4. Beat in the egg, vanilla extract, and almond extract.
  5. Gradually pour in the flour mixture and blend until just combined.
  6. Roll rounded tablespoonfuls of the dough into balls and roll them in the remaining sugar.
  7. Place the dough balls on ungreased cookie sheets, spacing them about 2 inches apart.
Baking
  1. Bake for 8 to 10 minutes, or until golden.
  2. Transfer the cookies to wire racks to cool.

Notes

If you're short on time, you can chill the dough for just 10-15 minutes. Avoid overmixing to keep cookies tender. For variations, mix in chocolate chips or sprinkle cinnamon into the sugar for rolling.
