Ingredients
  

Fruit and liquids
  • 1/3 cup pink dragonfruit, fresh or thawed Choose ripe dragonfruit for best flavor.
  • 1 small lime, chopped You can also use half a large lime.
  • 1 to 2 teaspoons sugar or alternative Adjust sweetness to taste.
  • 10 leaves mint Use fresh mint for best results.
  • 1 ounce non-alcoholic rum (optional) Adds depth of flavor, but can be omitted.
  • to top soda water Use flavored soda water for variations.
Garnishes
  • as desired extra dragonfruit, lime, or mint For garnish.

Method
 

Preparation
  1. In a tall glass, combine the dragonfruit, chopped lime, and sugar. Use a muddler to press them together until the juices from the lime and dragonfruit are released.
  2. Clap the mint leaves together in your hands to release their aroma. Add the mint to the glass, pressing down gently with the muddler.
  3. Fill the glass with ice cubes. If desired, add the non-alcoholic rum for additional flavor, and then top off with soda water.
  4. Stir gently to mix all the ingredients together. Garnish with extra dragonfruit slices, mint leaves, or lime wedges for a decorative touch.
Batch Preparation
  1. To make a batch of mocktails, muddle the dragonfruit, lime, and sugar in a pitcher, add the mint, fill with ice, mix in the non-alcoholic rum and soda water, and serve over ice with your chosen garnishes.

Notes

Store leftover mixture (without soda) in an airtight container in the refrigerator for up to 24 hours. Add ice and soda water before serving. Avoid freezing the mocktail mix as it may change the texture of the dragonfruit and mint.
