Ingredients

  • 1 cup Sugar Granulated or brown sugar for flavor.
  • 1 tbsp Baking powder Essential for rising.
  • 1/2 tsp Salt Enhances flavor.
Wet Ingredients
  • 1/2 cup Vegetable oil Can be substituted with melted butter.
  • 1 Egg
  • 1/2 cup Milk
  • 1 tsp Vanilla extract
Flavor Additions
  • 2 cups Fresh blueberries Look for plump, juicy berries.

Method
 

Preparation
  1. Preheat the oven to 375°F (190°C) and line your muffin tin with cupcake liners.
  2. In a large mixing bowl, whisk together the flour, sugar, baking powder, and salt until well combined.
  3. In a separate bowl, mix together the oil, egg, milk, and vanilla extract until smooth.
  4. Carefully add the wet ingredients to the dry mixture and stir until just combined. Gently fold in the blueberries.
Baking
  1. Spoon the batter into the prepared muffin cups, filling each about two-thirds full.
  2. Bake for 20-25 minutes, or until a toothpick inserted in the center comes out clean.
  3. Remove from the oven and let cool in the tin for a few minutes before transferring to a wire rack.

Notes

Don’t overmix the batter to keep your muffins light and fluffy. Store muffins in an airtight container for up to 5 days.
