Ingredients
  

For the Pizza Pockets
  • 1 tube refrigerated pizza dough or homemade
  • 1.5 cups shredded mozzarella freshly shredded melts best
  • 0.5 cups pizza sauce use a robust marinara for more flavor
  • 0.25 cups grated Parmesan for a salty, nutty finish
  • 1 tbsp melted butter use unsalted butter for better salt control
  • 0.5 tsp garlic powder or use fresh minced garlic for more punch
  • 0.5 tsp Italian seasoning crushed for a fragrant finish
Optional Fillings
  • pepperoni pre-sliced for convenience
  • cooked sausage pre-cooked to speed up preparation
  • veggies such as bell peppers, mushrooms, spinach

Method
 

Preparation
  1. Preheat the oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. Roll out the pizza dough and cut it into rectangles about the size of your palm.
  3. Add a spoonful of pizza sauce and a handful of mozzarella to each piece, then sprinkle with Parmesan.
  4. Add optional fillings if desired, taking care not to overfill.
  5. Fold over each pocket and press the edges with a fork to seal.
  6. Brush the tops with melted butter and sprinkle with garlic powder and Italian seasoning.
Baking
  1. Bake for 12–15 minutes or until golden and bubbly.
  2. Serve with warm marinara for dipping.

Notes

For best results, serve warm right out of the oven. Keep a tray near the oven to catch the pockets and maintain their crisp texture.
