  • 1/3 cup Softened butter Use unsalted for a richer taste.
  • 3/4 cup Sugar
  • 1 large Egg
  • 1 3/4 cups All-purpose flour Recommended brand: King Arthur.
  • 2 1/2 teaspoons Baking powder
  • 1/2 teaspoon Salt
  • 3/4 cup Whole milk Can substitute with almond or oat milk.
  • 1 1/2 teaspoons Vanilla extract
Topping
  • 2 cups Fresh strawberries Use ripe and juicy strawberries.
  • 1 cup Whipped topping Can be flavored yogurt or homemade whipped cream.

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C). Grease and flour your baking pan.
  2. In a mixing bowl, combine softened butter and sugar, and beat until light and fluffy.
  3. Beat in the egg until fully incorporated.
  4. In a separate bowl, whisk together the flour, baking powder, and salt.
  5. Alternately add the dry ingredients and milk to the creamed mixture. Stir until just combined.
  6. Add vanilla extract and gently mix it into the batter.
Baking
  1. Pour the batter into the prepared baking pan and spread evenly.
  2. Bake for 25-28 minutes or until golden and a toothpick comes out clean. Allow cooling before serving.

Notes

Allow the cake to cool completely before adding whipped topping. For variations, try mixing strawberries with other berries or adding chocolate.
