Preparation
- Preheat your oven to 350°F (175°C).
- Prepare your loaf pan by greasing it or lining it with parchment paper.
- In a large bowl, mash the bananas with a fork until smooth with a few lumps remaining.
- Stir in the melted butter until combined into a glossy mixture.
- Add the sugar, beaten egg, and vanilla extract. Mix until blended.
- Sprinkle the baking soda and salt over the mixture and gently stir them in.
- Fold in the flour carefully until no streaks of flour remain.
- Pour the batter into the prepared loaf pan and spread it out evenly.
Baking
- Bake for 50 to 60 minutes, or until a toothpick inserted into the center comes out clean.
- Let the banana bread cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely before slicing.
Notes
For a time-saving trick, soften bananas in the microwave for about 30 seconds. If over-mixed, adding extra banana or yogurt can help.
