Preparation
- Preheat the oven to 425°F with the oven rack on the lowest position.
- Thaw your chilled pie crust according to package directions, then unroll it and fit it into your pie dish.
- In a mixing bowl, whisk together the pumpkin puree, sweetened condensed milk, eggs, pumpkin pie spice, and salt.
Baking
- Pour the mixture into the crust, place the pie on a baking sheet, and bake for 15 minutes.
- After 15 minutes, reduce the oven temperature to 350°F and bake for an additional 35 to 40 minutes until the filling is nearly set with a slight jiggle in the center.
- Transfer the pie to a wire rack and let it cool for at least 2 hours before slicing. For a chilled pie, refrigerate for 2 hours after resting at room temperature for 1 hour.
Notes
Use a pre-made pie crust for convenience. If the filling cracks, it can be covered with whipped cream. Adding a splash of vanilla extract to the filling offers a unique flavor twist.
