  • 1 9-inch refrigerated pie crust (store-bought) A good-quality crust makes all the difference in texture.
  • 1 15 oz can pumpkin puree (not pie filling) Look for 100% pumpkin for the richest flavor.
  • 1 14 oz can sweetened condensed milk This gives the filling a luscious sweetness.
  • 2 large eggs These help bind everything beautifully.
  • 2 1/2 tsp pumpkin pie spice Use fresh spices for an extra burst of flavor.
  • 1/4 tsp salt Salt enhances sweetness, so don’t skip this!

Preparation
  1. Preheat the oven to 425°F with the oven rack on the lowest position.
  2. Thaw your chilled pie crust according to package directions, then unroll it and fit it into your pie dish.
  3. In a mixing bowl, whisk together the pumpkin puree, sweetened condensed milk, eggs, pumpkin pie spice, and salt.
Baking
  1. Pour the mixture into the crust, place the pie on a baking sheet, and bake for 15 minutes.
  2. After 15 minutes, reduce the oven temperature to 350°F and bake for an additional 35 to 40 minutes until the filling is nearly set with a slight jiggle in the center.
  3. Transfer the pie to a wire rack and let it cool for at least 2 hours before slicing. For a chilled pie, refrigerate for 2 hours after resting at room temperature for 1 hour.

Notes

Use a pre-made pie crust for convenience. If the filling cracks, it can be covered with whipped cream. Adding a splash of vanilla extract to the filling offers a unique flavor twist.
