Easy Sweet Potato Casserole

Ingredients
  

For the Sweet Potato Filling
  • 4 lbs sweet potatoes peeled and chopped
  • 3 large eggs
  • 1/2 cup granulated sugar
  • 6 Tbsp unsalted butter melted and slightly cooled
  • 1/2 Tbsp vanilla extract
  • 1 cup craisins dried cranberries
For the Pecan Crumble Topping
  • 2/3 cup brown sugar packed
  • 1/3 cup all-purpose flour or gluten-free flour substitute
  • 3 Tbsp unsalted butter cold, diced
  • 1 cup pecans coarsely chopped

Method
 

Preparation
  1. Peel and chop the sweet potatoes into 1-inch chunks. Place them in a large pot, covering them with enough water.
  2. Bring it to a boil and cook uncovered at a medium/low boil until tender, about 10–15 minutes. Drain and then mash the sweet potatoes until smooth.
Mixing the Filling
  1. Preheat your oven to 350°F.
  2. In a large bowl, whisk together the eggs, granulated sugar, melted butter, and vanilla extract.
  3. Stir this mixture into the cooked sweet potatoes, followed by the craisins.
  4. Spread this sweet potato mixture evenly into a 9×13 casserole dish.
Making the Pecan Topping
  1. In a small bowl, combine the brown sugar and flour.
  2. Add the cold diced butter and use your hands to rub the mixture together until it forms pea-sized crumbs.
  3. Finally, stir in the chopped pecans.
Baking
  1. Sprinkle the pecan crumble topping over the sweet potato filling.
  2. Bake uncovered in the preheated oven for 35 to 40 minutes, or until the casserole is hot and the edges of the sweet potatoes start to puff.

Notes

Store leftovers in an airtight container in the refrigerator for 3–5 days or freeze for up to 3 months. To reheat, use the oven or microwave.
