Ingredients

  • 3 large ripe bananas the riper the better
  • ½ cup melted butter adds moisture
  • ¾ cup granulated sugar
  • ¼ cup brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 ¾ cups all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon baking powder
  • ½ teaspoon salt
  • 1 cup chocolate chips plus extra for topping if you like
  • chopped walnuts or pecans optional
  • Cinnamon to sprinkle
  • a swirl of peanut butter optional

Method
 

Preparation
  1. Mash the bananas in a large mixing bowl until smooth.
  2. Stir in the melted butter, granulated sugar, brown sugar, eggs, and vanilla extract. Mix until well combined.
  3. In another bowl, whisk together the flour, baking soda, baking powder, and salt until evenly mixed.
  4. Fold the dry ingredients into the banana mixture gently. Be careful not to overmix.
  5. Mix in the chocolate chips until just distributed.
  6. Pour the batter into a greased loaf pan. If you’d like, sprinkle extra chocolate chips on top for an extra touch.
Baking
  1. Bake at 350°F (175°C) for 55–65 minutes. It’s done when a toothpick inserted into the center comes out clean.
  2. Cool the bread in the pan for about 10 minutes, then transfer to a wire rack to cool completely.
  3. Slice and enjoy while warm—a perfect treat!

Notes

Use overripe bananas for better flavor. Avoid overmixing to keep the bread light and fluffy.
