Make the chocolate ganache
- In a mixing bowl, place chopped dark chocolate.
- Heat the heavy cream, caster sugar, and a pinch of salt in a saucepan over medium heat until bubbling.
- Pour the hot cream over the chocolate and let sit for a minute.
- Stir gently until smooth, then mix in the diced butter.
- Cover with plastic wrap and refrigerate until set.
Prepare the raspberry sauce
- In a separate bowl, sieve the icing sugar.
- Push the fresh raspberries through a fine-mesh sieve and mix with the icing sugar until dissolved.
- Cover and reserve in the fridge.
Create the crumb
- Preheat your oven to 320°F (160°C).
- Combine flour, almond meal, and sugar in a bowl.
- Mix in melted butter until it resembles wet sand.
- Spread on a baking sheet and bake for 10-15 minutes until golden brown.
Make the honey tuile
- Combine melted butter and honey in a microwaveable container and heat until melted.
- Stir in flour and egg whites until smooth and spread a thin layer on baking paper.
- Bake for about 10 minutes, until golden.
Assemble the dessert
- On a plate, swirl raspberry sauce, add the crumb, and place the ganache on top.
- Finish with fresh raspberries and a shard of honey tuile, sprinkling crushed freeze-dried raspberry on top.
Notes
Don’t rush the ganache; allow chocolate to melt slowly for a smooth consistency. Prep all ingredients ahead for a smoother assembly process. Experiment with decorations for a striking presentation.
