Fancy and Easy Chocolate Raspberry Dessert

Ingredients
  

For the ganache
  • 1 cup heavy cream At least 36% fat content
  • 8 oz dark chocolate At least 70% cocoa
  • 2 tbsp unsalted butter Diced
For the raspberry sauce
  • 1 cup fresh raspberries Can substitute with thawed frozen raspberries
  • 2 tbsp icing sugar
For the crumb
  • 1 cup all-purpose flour Measured correctly to avoid density
  • 1/2 cup almond meal
  • 1/3 cup sugar
  • 1/4 cup unsalted butter Melted
For the honey tuile
  • 2 tbsp butter Melted
  • 2 tbsp honey
  • 1 tbsp all-purpose flour

Method
 

Make the chocolate ganache
  1. In a mixing bowl, place chopped dark chocolate.
  2. Heat the heavy cream, caster sugar, and a pinch of salt in a saucepan over medium heat until bubbling.
  3. Pour the hot cream over the chocolate and let sit for a minute.
  4. Stir gently until smooth, then mix in the diced butter.
  5. Cover with plastic wrap and refrigerate until set.
Prepare the raspberry sauce
  1. In a separate bowl, sieve the icing sugar.
  2. Push the fresh raspberries through a fine-mesh sieve and mix with the icing sugar until dissolved.
  3. Cover and reserve in the fridge.
Create the crumb
  1. Preheat your oven to 320°F (160°C).
  2. Combine flour, almond meal, and sugar in a bowl.
  3. Mix in melted butter until it resembles wet sand.
  4. Spread on a baking sheet and bake for 10-15 minutes until golden brown.
Make the honey tuile
  1. Combine melted butter and honey in a microwaveable container and heat until melted.
  2. Stir in flour and egg whites until smooth and spread a thin layer on baking paper.
  3. Bake for about 10 minutes, until golden.
Assemble the dessert
  1. On a plate, swirl raspberry sauce, add the crumb, and place the ganache on top.
  2. Finish with fresh raspberries and a shard of honey tuile, sprinkling crushed freeze-dried raspberry on top.

Notes

Don’t rush the ganache; allow chocolate to melt slowly for a smooth consistency. Prep all ingredients ahead for a smoother assembly process. Experiment with decorations for a striking presentation.
