  • 3 cups Frozen Hash Browns
  • 3/4 cup Shredded Monterey Jack Pepper Cheese adds a nice kick!
  • 1 cup Cooked Ham cubed
  • 1/4 cup Green Onion finely chopped for a fresh note
Egg Mixture
  • 4 Eggs beaten well
  • 12 ounces Evaporated Milk for creaminess
  • 1/4 teaspoon Black Pepper
  • 1/2 teaspoon Salt

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. Lightly grease a 9x13 inch baking dish.
  3. Spread the frozen hash browns evenly across the bottom of the dish.
  4. Layer the shredded Monterey Jack Pepper Cheese over the hash browns.
  5. Add the cubed cooked ham, sprinkling it over the cheese.
  6. Sprinkle the finely chopped green onion on top.
  7. In a bowl, whisk together the beaten eggs, evaporated milk, salt, and black pepper.
  8. Pour the egg mixture over the layered ingredients in the baking dish.
  9. Cover the dish and refrigerate overnight.
Baking
  1. Bake in the preheated oven for 40-50 minutes.
  2. Let it rest for 5 minutes before slicing.

Notes

Tip: Prep the casserole the night before for a quick morning meal. If the casserole seems too watery, ensure the hash browns are well-drained. Creative variations can include bell peppers or spinach.
