- Combine pineapple juice, diced fresh pineapple, minced jalapeƱos or habanero, honey, vinegar or lime juice, garlic powder, and salt in a small saucepan.
- Bring the mixture to a simmer over medium heat; it should bubble gently.
- Reduce the heat to maintain a gentle simmer; it should smell sweet and caramelizing.
- After about 8 minutes, check for thickening; the liquid should coat a spoon and form slow ribbons.
- Remove from heat and stir in the butter until it melts and the mixture looks glossy.
- For a smooth drizzle, blend briefly with a handheld blender; leave it chunky for pineapple bursts if desired.
- Taste and adjust seasoning with additional salt or lime juice if needed.
- Serve warm or allow to cool and bottle for future use.
Notes
Keeps in a sealed jar for up to 10 days in the fridge. Freeze in small portions for later use. Warm gently before serving.
