  • 1 cup pineapple juice Use fresh or canned.
  • 1/4 cup finely diced fresh pineapple Optional but excellent.
  • 1-2 jalapeƱos or 1 habanero, finely minced
  • 3 tbsp honey Can substitute with brown sugar.
  • 1 tbsp apple cider vinegar or lime juice For a brighter flavor.
  • 1 tbsp butter Use unsalted to control salt.
  • 1/2 tsp garlic powder Fresh garlic provides bigger flavor.
  • 1/4 tsp salt Adjust to taste.
  • pinch red pepper flakes Optional for extra heat.

Method
 

Cooking Instructions
  1. Combine pineapple juice, diced fresh pineapple, minced jalapeƱos or habanero, honey, vinegar or lime juice, garlic powder, and salt in a small saucepan.
  2. Bring the mixture to a simmer over medium heat; it should bubble gently.
  3. Reduce the heat to maintain a gentle simmer; it should smell sweet and caramelizing.
  4. After about 8 minutes, check for thickening; the liquid should coat a spoon and form slow ribbons.
  5. Remove from heat and stir in the butter until it melts and the mixture looks glossy.
  6. For a smooth drizzle, blend briefly with a handheld blender; leave it chunky for pineapple bursts if desired.
  7. Taste and adjust seasoning with additional salt or lime juice if needed.
  8. Serve warm or allow to cool and bottle for future use.

Notes

Keeps in a sealed jar for up to 10 days in the fridge. Freeze in small portions for later use. Warm gently before serving.
