Preparation
- Whisk together mayonnaise, sriracha, honey, smoked paprika, garlic powder, and lime juice in a small bowl until smooth. Taste and adjust the sriracha or honey to your liking.
- Dice the red onions, slice the jalapeños, shred the cheese, and roughly chop the cilantro. Set everything aside.
Grilling
- Preheat your grill to medium-high heat, around 400°F.
- Place the hot dogs on the grill and cook for about 5-7 minutes. Turn them occasionally to get an even char.
- During the last 2 minutes of grilling, lay the buns cut-side down on the grill to lightly toast them.
Assembly
- Spread a generous amount of Firecracker Sauce inside each bun. Add in the grilled hot dog, then pile on the shredded cheese, diced onions, sliced jalapeños, and cilantro.
- Drizzle with extra sauce if you love a little more heat.
Serving
- Enjoy your Flavorful Firecracker Hot Dogs hot off the grill while the cheese is melty and the sauce is vibrant.
Notes
Make the Firecracker Sauce a day in advance to save time! Avoid overcooking the hot dogs; they should be firm and juicy. Experiment with different cheeses for additional flavor!
