  • 8 all-beef hot dogs
  • 8 soft hot dog buns, lightly toasted
Firecracker Sauce
  • 1/4 cup mayonnaise
  • 2 tablespoons sriracha sauce Sriracha heat can be adjusted.
  • 1 tablespoon honey
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • 1 tablespoon fresh lime juice Fresh lime juice enhances the flavor.
Toppings
  • 1 cup shredded sharp cheddar cheese (or pepper jack)
  • 1/2 cup diced red onions
  • 1/2 cup sliced jalapeños (optional) Remove seeds for less heat.
  • Fresh cilantro leaves

Method
 

Preparation
  1. Whisk together mayonnaise, sriracha, honey, smoked paprika, garlic powder, and lime juice in a small bowl until smooth. Taste and adjust the sriracha or honey to your liking.
  2. Dice the red onions, slice the jalapeños, shred the cheese, and roughly chop the cilantro. Set everything aside.
Grilling
  1. Preheat your grill to medium-high heat, around 400°F.
  2. Place the hot dogs on the grill and cook for about 5-7 minutes. Turn them occasionally to get an even char.
  3. During the last 2 minutes of grilling, lay the buns cut-side down on the grill to lightly toast them.
Assembly
  1. Spread a generous amount of Firecracker Sauce inside each bun. Add in the grilled hot dog, then pile on the shredded cheese, diced onions, sliced jalapeños, and cilantro.
  2. Drizzle with extra sauce if you love a little more heat.
Serving

Notes

Make the Firecracker Sauce a day in advance to save time! Avoid overcooking the hot dogs; they should be firm and juicy. Experiment with different cheeses for additional flavor!
