- In a large bowl, combine the ground beef, French onion soup mix, breadcrumbs, beaten eggs, ketchup, milk, and Worcestershire sauce. Season it all with salt and pepper to taste.
- Using your hands, mix everything together. You want it to be well combined but not overly worked.
- Line your crockpot with aluminum foil for easy cleanup. Shape the meat mixture into a loaf right on the foil.
Cooking
- Cover and cook on low for about 6 hours or on high for 3 hours.
- About 30 minutes before it’s done, carefully remove the lid and top the meatloaf with caramelized onions and the Swiss cheese slices. Cover again to let the cheese melt.
- Once perfectly cooked, use the foil edges to lift the meatloaf out. Slice and serve warm.
Notes
Time-Saving Trick: Make extra caramelized onions ahead of time and keep them in the fridge. Common Mistake Fix: Avoid overmixing to keep the meatloaf tender.
