Ingredients

Meatloaf Mixture
  • 2 pounds ground beef Choose a mix with some fat for juiciness.
  • 1 packet French onion soup mix Adds a deep, rich flavor effortlessly.
  • 1 cup breadcrumbs Helps bind everything together; use fresh for extra texture.
  • 2 large eggs, beaten Acts like glue that holds the loaf perfectly.
  • 1/4 cup ketchup For a hint of sweetness—trust me, it works wonders!
  • 1/4 cup milk Adds moisture to the meatloaf; don’t skip this.
  • 1 tablespoon Worcestershire sauce Infuses a lovely umami flavor.
  • to taste teaspoon salt and pepper Essential for enhancing all those flavors.
Topping
  • 1 cup caramelized onions Provides sweet, earthy depth.
  • 6 slices Swiss cheese Melted on top for the ultimate finish.

Method

Preparation
  1. In a large bowl, combine the ground beef, French onion soup mix, breadcrumbs, beaten eggs, ketchup, milk, and Worcestershire sauce. Season it all with salt and pepper to taste.
  2. Using your hands, mix everything together. You want it to be well combined but not overly worked.
  3. Line your crockpot with aluminum foil for easy cleanup. Shape the meat mixture into a loaf right on the foil.
Cooking
  1. Cover and cook on low for about 6 hours or on high for 3 hours.
  2. About 30 minutes before it’s done, carefully remove the lid and top the meatloaf with caramelized onions and the Swiss cheese slices. Cover again to let the cheese melt.
  3. Once perfectly cooked, use the foil edges to lift the meatloaf out. Slice and serve warm.

Notes

Time-Saving Trick: Make extra caramelized onions ahead of time and keep them in the fridge. Common Mistake Fix: Avoid overmixing to keep the meatloaf tender.
