Ingredients
  

For the Filling
  • 8 slices white sandwich bread, crusts removed Soft and perfect for rolling
  • 8 ounces cream cheese, softened Make sure it’s nice and creamy
  • 1/4 cup powdered sugar For that sweet touch
  • 1/2 teaspoon vanilla extract A must-have for flavor
  • 1/2 teaspoon lemon zest Optional, but adds a wonderful brightness
For the Coating
  • 1/2 cup granulated sugar For coating, sweeten it up
  • 1 teaspoon cinnamon The warm spice that brings everything together
  • Vegetable oil For frying, ensure it’s of good quality

Method
 

Preparation
  1. In a medium bowl, mix the softened cream cheese, powdered sugar, vanilla extract, and lemon zest until it becomes smooth and creamy.
  2. Take each slice of bread and flatten it with a rolling pin until it’s nice and thin.
  3. Spread 1 to 2 tablespoons of your cream cheese mixture onto each slice and roll it up tightly. Press the seam to seal it.
Cooking
  1. In a shallow bowl, combine the granulated sugar and cinnamon.
  2. Heat about 1 inch of vegetable oil in a skillet to approximately 350 degrees F (175 degrees C).
  3. Fry the roll-ups seam-side down for only 1 to 2 minutes on each side until they turn golden brown and crispy.
  4. Remove them and let them drain on paper towels.
  5. While they’re still warm, roll them in the cinnamon sugar mixture.
  6. Serve warm with optional toppings such as whipped cream, chocolate sauce, or fresh berries.

Notes

If you prep the cream cheese mixture ahead of time, you can roll these up in a flash when you’re ready to fry! Ensure your oil is at the right temperature before frying. For a fun twist, add crushed nuts or fruit preserves in the filling.
