Ingredients
  

Salad Base
  • 1 bag 16 ounces coleslaw mix
  • 1 can 15 ounces black beans, rinsed and drained
  • 1.5 cups canned corn kernels, drained
  • 1 medium jalapeño pepper, seeded and finely diced
  • 1 small red bell pepper, seeded and finely diced
  • 3 pieces green onions, finely sliced
  • 1/4 cup fresh cilantro, finely chopped
Seasoning and Dressing
  • 1 tablespoon taco seasoning
  • 1/2 teaspoon ground cumin
  • 1 bag 9.75 ounces Chili Cheese Fritos, divided Reserve some for topping
  • 1/2 cup sour cream
  • 1/2 cup mayonnaise
  • 1/4 cup fresh lime juice For best flavor, use fresh lime juice
  • 2 tablespoons chipotle sauce from canned chipotles in adobo

Method
 

Preparation
  1. In a large mixing bowl, add the coleslaw mix, black beans, and corn.
  2. Finely dice the jalapeño and red bell pepper, then toss them in with the rest of the ingredients along with sliced green onions, cilantro, taco seasoning, and ground cumin.
Dressing
  1. In a separate medium bowl, whisk together sour cream, mayonnaise, lime juice, and chipotle sauce.
Combine
  1. Pour the chipotle dressing over the salad mixture and gently toss until all ingredients are coated.
  2. Fold in all but a handful of the Chili Cheese Fritos.
Serve
  1. Serve immediately, topping with reserved Fritos for extra crunch.

Notes

Make the dressing a day ahead for enhanced flavor. If too spicy, add more sour cream to balance. For variation, consider adding diced avocado or cooked chicken.
