Preparation
- In a large mixing bowl, add the coleslaw mix, black beans, and corn.
- Finely dice the jalapeño and red bell pepper, then toss them in with the rest of the ingredients along with sliced green onions, cilantro, taco seasoning, and ground cumin.
Dressing
- In a separate medium bowl, whisk together sour cream, mayonnaise, lime juice, and chipotle sauce.
Combine
- Pour the chipotle dressing over the salad mixture and gently toss until all ingredients are coated.
- Fold in all but a handful of the Chili Cheese Fritos.
Serve
- Serve immediately, topping with reserved Fritos for extra crunch.
Notes
Make the dressing a day ahead for enhanced flavor. If too spicy, add more sour cream to balance. For variation, consider adding diced avocado or cooked chicken.
