Ingredients
  

For the Chicken
  • 1.25 lbs chicken breast, cut into bite-size pieces
  • 1 tbsp olive oil
  • 2 tbsp butter Unsalted for better salt control
  • 1 tsp garlic powder
  • 0.5 tsp paprika
  • 0.5 tsp Cajun seasoning Optional for heat
  • Salt & pepper, to taste
  • 3 cloves garlic, minced Fresh garlic for bigger flavor
For the Pasta
  • 12 oz spaghetti
  • 1 cup heavy cream
  • 0.5 cup pasta water, reserved
  • 1 cup grated Parmesan cheese
  • 0.5 tsp Italian seasoning
  • Fresh parsley, optional garnish
  • Extra Parmesan, optional garnish

Method
 

Cooking the Pasta
  1. Bring a large pot of salted water to a boil.
  2. Add 12 oz spaghetti and cook until al dente, about 8–10 minutes.
  3. Reserve 1/2 cup pasta water, then drain and set the pasta aside.
Preparing the Chicken
  1. Season the chicken pieces with garlic powder, paprika, Cajun seasoning (if using), salt, and pepper.
  2. Heat olive oil in a large skillet over medium-high heat.
  3. Add the chicken and cook until golden and cooked through, about 4–6 minutes.
  4. Reduce heat, add butter and minced garlic, and cook until fragrant.
  5. Remove chicken and set aside.
Making the Sauce
  1. Wipe the skillet lightly and melt butter over medium heat.
  2. Pour in heavy cream and bring to a gentle simmer.
  3. Whisk in Parmesan until the sauce is smooth and glossy.
  4. Add Italian seasoning. If the sauce is thick, stir in reserved pasta water.
Assembly
  1. Add cooked spaghetti to the sauce and toss well.
  2. Nestle the garlic butter chicken bites on top or fold into the pasta.
  3. Garnish with chopped parsley and extra Parmesan, then serve hot.

Notes

You can cut chicken the night before for faster cooking. If the sauce breaks, lower the heat and whisk in more pasta water slowly.
