For the Scampi
  • 2 tablespoons olive oil Good quality olive oil will enhance the overall flavor.
  • 4 tablespoons butter Use unsalted butter for better salt control.
  • 4-5 cloves garlic, minced Fresh garlic gives it an extra flavor boost.
  • 1 1/4 pounds large shrimp, shelled with tails on or off Choose shrimp that look fresh and vibrant.
  • 1 pinch salt to taste Adjust according to your preference.
  • 1 pinch cracked pepper to taste
  • 1/4 cup dry white wine or broth For a non-alcoholic version, broth works beautifully.

Method
 

Preparation
  1. Start by heating the olive oil and 2 tablespoons of butter in a large pan or skillet over medium heat until the butter starts to melt.
  2. Add the minced garlic and sauté until fragrant, about 30 seconds to a minute.
  3. Toss in the shrimp, seasoned with salt and pepper. Sauté for 1 to 2 minutes on one side until they start turning pink, then flip.
  4. Pour in the white wine or broth and add red pepper flakes if desired. Bring to a simmer for 1 to 2 minutes, or until the wine has reduced by about half and the shrimp is cooked through.
  5. Stir in the remaining butter, lemon juice, and fresh parsley before taking off the heat.

Notes

If you buy pre-peeled shrimp, you'll save about 10 minutes in prep. Be careful not to overcook the shrimp as they can become rubbery. For a rich, creamy sauce, consider adding a splash of cream or tossing in some cherry tomatoes.
