For the Potatoes
  • 4-5 pieces small/medium-sized potatoes, cubed Use small potatoes for even cooking.
  • 2 tablespoons olive oil For tossing the potatoes.
  • 1 teaspoon garlic powder For seasoning.
  • 1 teaspoon paprika For seasoning.
  • 1 teaspoon salt
  • 1 teaspoon pepper
For the Chicken
  • 2 pieces chicken breasts, cubed
  • 1/2 teaspoon salt For seasoning.
  • 1/2 teaspoon pepper For seasoning.
  • 1 teaspoon paprika For seasoning.
  • 1 teaspoon onion powder For seasoning.
  • 1 teaspoon Italian seasoning For seasoning.
  • 2 tablespoons butter Unsalted helps control salt.
  • 2 tablespoons minced garlic Fresh garlic for bigger flavor.
  • As desired Buffalo Wild Wings Garlic Parmesan Sauce For flavoring chicken.
For Topping
  • 1 cup shredded mozzarella cheese

Method
 

Preparation
  1. Wash, peel if desired, and cut the potatoes into small cubes. Toss them with olive oil, salt, pepper, garlic powder, and paprika.
  2. Air fry the potatoes at 400°F for about 20 minutes, shaking the basket twice.
  3. Cut the chicken into small cubes and season with salt, pepper, paprika, onion powder, and Italian seasoning.
Cooking
  1. Heat butter in a skillet over medium-high. When sizzling, add the chicken in a single layer and cook until golden and reaches 165°F (about 6-8 minutes).
  2. Stir in minced garlic and pour in the Garlic Parmesan Sauce to taste. Cook 1-2 minutes until the sauce thickens.
  3. Fold the air-fried potatoes into the skillet and toss gently to soak up the sauce. Sprinkle mozzarella on top and cover until melted.

Notes

Time-saver: Air fry the potatoes while seasoning the chicken. If the chicken steams, raise the heat and cook in batches. For variation, add red pepper flakes or substitute mozzarella with Parmesan.
