Ingredients
  

For the meatloaf
  • 1 lb ground chicken A lean alternative to beef, packed with protein.

  • 1 tbsp fresh parsley, chopped For additional flavor.
  • 1 tsp oregano Dried oregano adds flavor.
  • 1 tsp onion powder Enhances the meatloaf's flavor.
  • 1 tsp salt To taste.
  • 1/2 tsp black pepper To taste.
For topping
  • 1 cup marinara sauce To spoon over each meatloaf.
  • 1 cup shredded mozzarella cheese For a cheesy topping.

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. In a large bowl, combine ground chicken, Parmesan, breadcrumbs, minced garlic, egg, milk, parsley, oregano, onion powder, salt, and pepper until just combined.
  3. Form the mixture into small loaves and place them on a lined baking sheet.
Cooking
  1. Bake the meatloaves for 25 minutes, or until the internal temperature reaches 165°F (74°C).
  2. Spoon marinara sauce over each meatloaf and top with shredded mozzarella. Return to the oven for 5 more minutes, until the cheese is melted and bubbly.
  3. Allow the meatloaves to cool slightly, garnish with parsley, and serve warm.

Notes

Don't overcrowd the pan for even cooking. Use a meat thermometer for perfect results.
