Ingredients
  

Cookie Base Ingredients
  • 1.5 cups granulated sugar
  • 0.5 cups unsalted butter Use unsalted for better control of salt.
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 2.5 cups all-purpose flour
  • 1.5 teaspoons ground cinnamon
  • 1 teaspoon baking soda
  • 1 teaspoon hot water Mix with baking soda.
Add-ins
  • 2.5 cups chopped walnuts
  • 2 cups pitted dates, chopped These add sweetness and chewiness.

Method
 

Preparation
  1. Preheat your oven to 350°F.
  2. In a large mixing bowl, add the butter and sugar. Mix until well combined.
  3. Add the eggs and vanilla. Mix until light and airy.
  4. In a small bowl, mix the baking soda with hot water until it dissolves, then stir into the butter mixture.
  5. Add the flour and ground cinnamon. Mix until just combined.
  6. Gently fold in the chopped walnuts and dates.
Baking
  1. Scoop the dough in 2 to 3 tablespoon portions onto two ungreased cookie sheets.
  2. Bake for 12 to 14 minutes or until the edges turn golden.
  3. Allow the cookies to cool before transferring them to an airtight container.

Notes

Cookies can be made ahead for better flavor. Keep dough in the fridge for a time-saving trick. Avoid overmixing to prevent tough cookies.
