Preparation
- Preheat your oven to 350°F.
- In a large mixing bowl, add the butter and sugar. Mix until well combined.
- Add the eggs and vanilla. Mix until light and airy.
- In a small bowl, mix the baking soda with hot water until it dissolves, then stir into the butter mixture.
- Add the flour and ground cinnamon. Mix until just combined.
- Gently fold in the chopped walnuts and dates.
Baking
- Scoop the dough in 2 to 3 tablespoon portions onto two ungreased cookie sheets.
- Bake for 12 to 14 minutes or until the edges turn golden.
- Allow the cookies to cool before transferring them to an airtight container.
Notes
Cookies can be made ahead for better flavor. Keep dough in the fridge for a time-saving trick. Avoid overmixing to prevent tough cookies.
