- Slice the unpeeled ginger into rounds about 4-5 millimeters thick.
- In a medium saucepan, combine the sliced ginger, water, and monk fruit sweetener. Heat over medium heat, stirring occasionally, until the mixture begins to simmer gently.
- Once simmering, reduce the heat to low, cover the saucepan, and let it infuse for 10-15 minutes.
- Remove from heat and allow it to infuse for an additional 15-30 minutes. The longer you let it sit, the stronger the ginger flavor will be.
- Strain out the ginger slices and add the freshly squeezed lemon juice to the pan. Give it a gentle stir to combine.
- Refrigerate for at least one hour. This drink is best served chilled!
- Serve over ice. For a sparkling version, halve the water content, make as normal, and add 2 cups of sparkling water just before serving.
Notes
This lemonade keeps well; consider making a large batch for gatherings. Adjust sweetness to taste and don't forget to garnish with a slice of lemon or a sprig of mint.
