Ingredients
  

For the lemonade
  • 2.5-3 inches fresh ginger, unpeeled Choose plump, firm ginger roots for best flavor.
  • 1 cup freshly squeezed lemon juice
  • 1/3 cup powdered monk fruit sweetener or alternative You may experiment with honey or agave.
  • 4 cups water

Method
 

Preparation
  1. Slice the unpeeled ginger into rounds about 4-5 millimeters thick.
  2. In a medium saucepan, combine the sliced ginger, water, and monk fruit sweetener. Heat over medium heat, stirring occasionally, until the mixture begins to simmer gently.
  3. Once simmering, reduce the heat to low, cover the saucepan, and let it infuse for 10-15 minutes.
  4. Remove from heat and allow it to infuse for an additional 15-30 minutes. The longer you let it sit, the stronger the ginger flavor will be.
  5. Strain out the ginger slices and add the freshly squeezed lemon juice to the pan. Give it a gentle stir to combine.
  6. Refrigerate for at least one hour. This drink is best served chilled!
  7. Serve over ice. For a sparkling version, halve the water content, make as normal, and add 2 cups of sparkling water just before serving.

Notes

This lemonade keeps well; consider making a large batch for gatherings. Adjust sweetness to taste and don't forget to garnish with a slice of lemon or a sprig of mint.
