Ingredients

Dry Ingredients
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
Wet Ingredients
  • 1/2 cup unsalted butter, softened Provides a rich flavor
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract Adds fragrance to the batter
  • 1/2 cup buttermilk Can be substituted with Greek yogurt
Filling and Topping
  • 1 1/2 cups fresh strawberries, chopped Fresh strawberries yield the best flavor
  • 1 cup powdered sugar For the glaze
  • 2 tablespoons milk
  • 1 teaspoon vanilla extract (for glaze)

Method

Preparation
  1. Preheat your oven to 350°F (175°C). Grease a loaf pan and set it aside.
  2. In a mixing bowl, whisk together the flour, baking soda, and salt.
  3. In another bowl, cream the softened butter and sugar until it's light and fluffy, about 3-4 minutes.
  4. Add the eggs, one at a time, mixing well after each addition.
  5. Stir in the vanilla extract until well combined.
  6. Slowly add the dry ingredients to the butter mixture, alternating with the buttermilk. Stir gently until just combined.
  7. Gently fold in the chopped strawberries.
Baking
  1. Pour the batter into the prepared loaf pan and smooth the top with a spatula.
  2. Bake for 55-60 minutes, or until a toothpick inserted in the center comes out clean.
Glazing
  1. While the bread cools, prepare the glaze by mixing powdered sugar, milk, and vanilla extract until smooth.
  2. Drizzle the glaze over the cooled strawberry bread. Slice and enjoy!

Notes

Pre-measure your ingredients to save time and avoid overmixing for a lighter bread. Consider adding cinnamon for a warm flavor.
