- Preheat the oven to 350°F (175°C) and line a muffin tin with cupcake liners.
- In a large mixing bowl, combine the vanilla cake mix, Grape Crush soda, vegetable oil, eggs, sugar, and vanilla extract. Mix until smooth and free of lumps.
- Gently fold in the purple grape jelly to ensure it gets evenly distributed throughout the batter.
- Pour the batter into the cupcake liners, filling each about 2/3 full.
- Place in the preheated oven and bake for 18-20 minutes, checking for doneness with a toothpick.
- Once baked, cool in the pan for about 5 minutes before transferring to a wire rack to cool completely.
- Frost with your favorite frosting or enjoy plain.
Notes
Don't overmix the batter to avoid dense cupcakes. Store any leftovers in an airtight container; they last up to 3 days in the fridge.
