  • 2 lbs baby potatoes Washed and cut in half
  • 3 tablespoons olive oil Good quality for cleaner flavor
  • 2 tablespoons fresh lemon juice Always tastes brighter
  • 1 teaspoon lemon zest Adds extra upbeat lemon note
  • 2 cloves garlic, minced Fresh garlic gives extra flavor boost
  • 1 teaspoon dried oregano Classic Greek touch
  • Salt and pepper to taste
  • Fresh parsley for garnish Optional

Method
 

Preparation
  1. Wash and cut the baby potatoes in half. Pat them dry.
  2. In a large bowl, combine olive oil, lemon juice, lemon zest, minced garlic, oregano, salt, and pepper. Whisk until fragrant.
  3. Add the potatoes to the bowl and toss until they are evenly coated.
Cooking
  1. Preheat the air fryer to 400°F (200°C).
  2. Let the potatoes sit for a couple of minutes to allow the flavors to settle.
  3. Place the seasoned potatoes in the air fryer basket in a single layer.
  4. Cook for about 15–20 minutes, shaking the basket halfway through, until crispy and golden brown.
  5. Remove from the air fryer and garnish with fresh parsley if desired. Serve warm.

Notes

To save time, cut potatoes while the air fryer heats up. For soggy potatoes, cook a few extra minutes at 400°F. Consider adding fresh rosemary or smoked paprika for extra flavor.
