  • 2 cups shredded chicken Use rotisserie chicken for a quick shortcut.
  • 1 can (10 oz) green chile sauce This adds a fabulous kick without too much heat.
  • 1 cup sour cream Creamy, dreamy goodness!
  • 2 cups cheddar or Monterey Jack cheese, shredded Melts beautifully for that perfect top layer.
  • 1 can (15 oz) corn, drained Adds sweetness and texture, which we love!
  • Salt and pepper Always season to your preference!
  • Oil for greasing the dish Keep things from sticking and ensure that gorgeous golden crust.

Preparation
  1. Preheat your oven to 350°F (175°C). Grease a 9×13 inch baking dish.
  2. In a mixing bowl, combine shredded chicken, green chile sauce, and sour cream. Sprinkle in salt and pepper to your liking.
  3. Start layering: Place a layer of corn tortillas at the bottom of the greased dish.
  4. Spread half of the chicken mixture over the tortillas, followed by a layer of corn, and then a sprinkle of cheese.
  5. Repeat the layers until all ingredients are used up—tortillas, chicken mixture, corn, and cheese! End with a glorious layer of cheese on top.
  6. Bake in the preheated oven for 25-30 minutes or until the cheese is bubbly and golden.
  7. Let it cool for a few moments before serving.

Notes

For a time-saving trick, use store-bought shredded chicken or canned chicken. If the casserole looks dry before baking, drizzle some chicken broth on top to keep it moist. For a creative twist, add diced jalapeños or olives for added flavor.
