Preparation
- Preheat your oven to 350°F (175°C). Grease a 9×13 inch baking dish.
- In a mixing bowl, combine shredded chicken, green chile sauce, and sour cream. Sprinkle in salt and pepper to your liking.
- Start layering: Place a layer of corn tortillas at the bottom of the greased dish.
- Spread half of the chicken mixture over the tortillas, followed by a layer of corn, and then a sprinkle of cheese.
- Repeat the layers until all ingredients are used up—tortillas, chicken mixture, corn, and cheese! End with a glorious layer of cheese on top.
- Bake in the preheated oven for 25-30 minutes or until the cheese is bubbly and golden.
- Let it cool for a few moments before serving.
Notes
For a time-saving trick, use store-bought shredded chicken or canned chicken. If the casserole looks dry before baking, drizzle some chicken broth on top to keep it moist. For a creative twist, add diced jalapeños or olives for added flavor.
