Preparation
- Place the diced chicken in a bowl, adding the olive oil, minced garlic, salt, and pepper. Toss well to coat the chicken evenly.
- Preheat the grill or skillet over medium heat. If using a skillet, heat it until hot and just starting to smoke, then reduce to medium.
Cooking
- Add the chicken bites in a single layer to the grill/skillet. Grill for about 5–7 minutes on each side until golden and fully cooked.
- In another bowl, combine the Greek yogurt with additional minced garlic, seasoning with salt and pepper. Stir until smooth and creamy.
Serving
- Serve the grilled chicken bites hot with the creamy garlic sauce spooned over them, garnished with fresh parsley.
Notes
Marinate the chicken for 30 minutes if possible for enhanced flavor. If chicken dries out, add a splash of chicken broth to the pan. For a smoky kick, add smoked paprika to the olive oil.
