  • 2 medium zucchinis, sliced Tossed with olive oil, salt, and pepper
  • 2 tablespoons olive oil For grilling zucchini
  • 1 cup cooked rice or quinoa Can be used as a base
  • 1/2 cup creamy herb sauce Such as ranch or tzatziki
  • to taste Salt and pepper For seasoning
  • Fresh herbs for garnish Such as parsley or cilantro

Method

Preparation
  1. Preheat the grill to medium-high heat.
  2. Generously season the steak with salt and pepper.
  3. Prepare the zucchinis by tossing them in a bowl with olive oil, salt, and pepper.
Cooking
  1. Grill the steak for 5-7 minutes on each side until it reaches the desired doneness. Let it rest before slicing.
  2. Grill the zucchini for about 3-5 minutes until tender and slightly charred.
Assembly
  1. In a serving bowl, layer the cooked rice or quinoa, followed by the grilled zucchini and sliced steak.
  2. Drizzle the creamy herb sauce over the layers and garnish with fresh herbs if desired. Serve immediately.

Notes

For a lighter option, substitute the creamy sauce with a yogurt-based dressing. Use a meat thermometer to check the steak's doneness and avoid overcooking.
