Ingredients
  

For the Filling
  • 1 pound ground beef
  • 1 onion, sliced Use sweet onion for milder flavor.
  • 1 bell pepper, sliced Adds color and sweetness.
  • 4 rolls hoagie rolls Fresh rolls crisp under the broiler.
  • 8 ounces provolone cheese or cheese of choice Provolone melts beautifully; American is classic.
  • 1 tablespoon olive oil Gives a nice sear.
  • to taste Salt and pepper

Method
 

Preparation
  1. Heat a large skillet over medium heat and add 1 tablespoon olive oil until it shimmers.
  2. Add the sliced onions and bell peppers, cooking until softened, about 5 minutes.
  3. Push the veggies to the side and add the ground beef. Season with salt and pepper, breaking it into pieces.
  4. Cook until browned and no longer pink, about 7–10 minutes.
  5. Meanwhile, preheat your oven broiler and split the hoagie rolls, placing them cut-side up on a baking sheet.
  6. Scoop generous portions of the beef-and-pepper mix into each roll.
  7. Top each with slices of provolone until the meat peeks through.
  8. Broil the sandwiches for 1–2 minutes until the cheese bubbles and edges are lightly browned.
  9. Remove, let cool for one minute, and serve hot.

Notes

Time-saver: Slice onions and peppers the night before. Avoid overcrowding the pan for best browning. For variations, stir in smoked paprika or hot sauce.
