Dry Ingredients
  • 2 cups Rolled oats Look for gluten-free oats if you're sensitive to gluten.
  • 1 cup Oat flour Can substitute with whole wheat flour.
  • 1 tsp Baking powder
  • 1 tsp Baking soda
  • 1 tsp Cinnamon
  • 0.5 tsp Nutmeg
  • 0.5 tsp Salt
Wet Ingredients
  • 0.5 cup Coconut oil, melted Can substitute with melted butter.
  • 0.75 cup Coconut sugar Brown sugar works in a pinch.
  • 0.5 cup Pure maple syrup Honey is a suitable alternative.
  • 1 large Flax egg Use a flaxseed meal mixed with water.
  • 1 tsp Vanilla extract

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a medium bowl, whisk together the oats, oat flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
  3. In a large bowl, whisk together the melted coconut oil, coconut sugar, maple syrup, flax egg, and vanilla extract until smooth.
  4. Add the dry mixture to the wet ingredients, stirring until just combined and thickened.
  5. Use a medium cookie scoop to drop balls of dough on the prepared baking sheet. Flatten each ball slightly with a fork.
Baking
  1. Place into the preheated oven and bake for 8-12 minutes, or until the edges are lightly golden.
  2. Allow cookies to cool on the pan for about 10 minutes before transferring them to a cooling rack to cool completely.

Notes

Don't overcrowd the pan to allow cookies to spread. You can make extra cookies to ensure enough for everyone. Cooling allows for better flavor development and texture.
