Ingredients

Main Ingredients
  • 1 lb ground beef for that rich flavor
  • 1 small onion, diced adds sweetness and depth
  • 1 tsp garlic, minced fresh garlic gives it that extra flavor boost
  • 3.5 cups beef broth for a hearty base
  • 1 can petite diced tomatoes (15 oz) for a touch of acidity
  • 1 can condensed tomato soup (10.5 oz) adds creaminess
  • 2 tsp Worcestershire sauce for a savory kick
  • 2 tsp Italian seasoning for that cozy, aromatic touch
  • 1 bag frozen mixed vegetables (16 oz) convenience without compromising nutrition
  • 2 medium potatoes, diced for a filling touch

Method

Preparation
  1. In a large pot or Dutch oven, add the ground beef over medium heat. Cook until the meat is no longer pink and the onions are soft.
  2. Season with salt and pepper to taste. Stir well to blend the ingredients.
  3. Add beef broth, petite diced tomatoes, and condensed tomato soup. Stir to combine.
  4. Drizzle in Worcestershire sauce and mix in Italian seasoning.
  5. Stir in frozen mixed vegetables and diced potatoes.
  6. Bring the soup to a gentle boil, then cover and reduce the heat to simmer for about 30 minutes.

Notes

For a quick option, use pre-diced frozen onions. To reduce saltiness, add a peeled potato while simmering, and remove before serving. Consider adding red wine or fresh herbs for extra flavor.
