Ingredients
  

Dry Ingredients
  • 2 cups all-purpose flour
  • 3/4 cup granulated sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
Wet Ingredients
  • 1 large egg
  • 1 cup milk
  • 1/2 cup vegetable oil Can be swapped for melted butter for extra richness.
  • 1 teaspoon vanilla extract
Mix-ins
  • 1 cup chocolate chips Try different types of chocolate chips for variety.

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. Line a muffin tin with paper liners or grease it generously.
  3. In a large bowl, whisk together the flour, sugar, baking powder, and salt until combined.
  4. In another bowl, whisk the egg, milk, vegetable oil, and vanilla extract until blended.
  5. Pour the wet ingredients into the dry ingredients and stir gently. A few lumps are fine.
  6. Gently fold in the chocolate chips until evenly distributed.
  7. Scoop the batter into muffin cups, filling each about two-thirds full.
Baking
  1. Bake for 18-20 minutes until golden, and a toothpick inserted into the center comes out clean.
  2. Cool the muffins in the tin for 5 minutes before transferring them to a wire rack.

Notes

For best results, use room temperature ingredients for better mixing. You can prepare the batter the night before and refrigerate it to bake fresh in the morning. Avoid overmixing to prevent dense muffins.
