  • 1 cup all-purpose flour Use any all-purpose flour you have; it’s a versatile staple.
  • 1 cup yellow cornmeal This gives cornbread its classic texture and flavor.
  • 2/3 cup granulated sugar Sweetens things up just right; you can adjust it to your taste.
  • 1 teaspoon salt Essential for bringing out all those flavors.
  • 1 1/2 teaspoons baking powder This helps your cornbread rise and stay fluffy.
Wet Ingredients
  • 1/3 cup neutral oil or melted butter Butter adds richness, but oil works fine for a lighter texture.
  • 1 large egg Brings everything together and helps with that beautiful rise.
  • 1 cup milk or milk substitute A little creaminess ties it all up; almond milk works too!

Preparation
  1. Preheat your oven to 400°F (200°C) and grease a 9-inch round cake pan, a square baking dish, or a cast-iron skillet.
  2. In a medium bowl, combine the flour, cornmeal, sugar, salt, and baking powder. Whisk together until well-blended.
  3. Create a small well in the center of your dry ingredients. Pour in the oil (or melted butter), the milk, and the cracked egg. Stir gently just until combined, leaving a few lumps.
Baking
  1. Pour the batter into your prepared pan and bake for about 25 minutes, or until the top is golden brown and a toothpick inserted into the center comes out clean.

Notes

Mix dry ingredients a day ahead and store in an airtight container. Don’t overmix the batter to prevent toughness. Optional additions include shredded cheese or jalapeños.
