Ingredients
  

For frying
  • 2.5 cups peanut oil, plus more Peanut oil has a high smoke point, making it perfect for frying those crispy fries!
For the fries
  • 1 pound large russet potato, skinned and cut into 1/3 inch slices Russet potatoes are the best for fries—fluffy inside and crispy outside!
  • to taste dash kosher salt Always season right after frying for that irresistible salty goodness!

Method
 

Preparation
  1. Cut the potatoes into consistent pieces, about 1/4 to 1/3 inch thick.
  2. Soak the potato slices in cold water for 30 minutes to 1 hour to remove excess starch.
  3. Drain the potato slices well and spread them on a paper towel-lined plate, gently patting them dry.
Cooking
  1. Heat peanut oil in a Dutch oven to 275 degrees F.
  2. Carefully add the potato slices to the hot oil and cook for about 5 minutes.
  3. Use a spider strainer to remove the fries and let them cool on a paper towel-lined baking sheet.
  4. Increase the oil temperature to 350 degrees F.
  5. Return the fries to the oil and cook for another 3 to 4 minutes until golden brown and crisp.
  6. Drain the fries well, transfer them to a serving dish, and season immediately with kosher salt.

Notes

Cut potatoes ahead of time and soak them in the fridge overnight. If fries come out soggy, ensure they are dried properly before frying. Try tossing with grated Parmesan and herbs for a gourmet touch.
