Ingredients
  

Meatloaf Ingredients
  • 2 lb ground beef Use a mix of ground turkey or a blend of beef and pork for a different texture.
  • 1 cup breadcrumbs Plain or panko to add light texture.
  • 1/2 cup milk Heats the crumbs and keeps the meatloaf moist.
  • 2 large eggs Binds the loaf together.
  • 1 small onion, finely diced Soft and sweet when cooked.
  • 2 tbsp Worcestershire sauce Adds depth and umami.
  • 1 tbsp garlic powder Or use fresh garlic for an extra flavor boost.
  • 1 tsp salt
  • 1/2 tsp black pepper
Glaze Ingredients
  • 1 cup ketchup (divided) Half for baking, half for glazing.
  • 1/4 cup brown sugar Adds caramelized sweetness.
  • 1 tbsp mustard Brightens the glaze.

Method
 

Preparation
  1. Preheat the oven to 375°F (190°C) and lightly grease a baking sheet or a loaf pan.
  2. In a large bowl, combine the ground beef, breadcrumbs, milk, eggs, onion, Worcestershire sauce, garlic powder, salt, and pepper. Mix gently by hand or spoon.
  3. Shape the mixture into a loaf on the baking sheet or in the loaf pan, ensuring the top is smooth but not tightly packed.
Baking
  1. Mix 1/2 cup of ketchup with the brown sugar and mustard until glossy and smooth.
  2. Spread half the glaze over the loaf and bake for 45 minutes.
  3. Brush on the remaining glaze and bake for an additional 15–20 minutes until the internal temperature reaches 160°F (71°C).
  4. Rest the loaf for 10 minutes before slicing.

Notes

Serve with warm slices of homemade artisan bread. Tips for preparation: Mix the glaze while the loaf is baking. If the meatloaf feels dry, mix in a splash of milk or an extra egg next time. Experiment with adding grated carrot or fresh herbs for flavor.
