Homemade Mexican Pizza

A delightful and comforting twist on pizza that combines ground beef, refried beans, and gooey cheese on crispy tortillas.

Ingredients
  

Main Ingredients
  • 1 pound Ground beef for that rich, meaty goodness
  • 1 can Refried beans creamy and full of flavor
  • 2 cups Cheese (cheddar or Mexican blend) I recommend a blend for that extra yum!
  • 4 pieces Tortillas the crispy base of our pizza
  • 1 packet Taco seasoning enhances the beef and brings warmth
  • 2 tablespoons Olive oil to bring everything together
Optional Toppings
  • 1 cup Lettuce for a fresh crunch
  • 1 medium Tomato adds sweetness and color
  • 1 cup Sour cream to cool and balance the heat
  • 1 jalapeño Jalapeños for those who like a bit of spice

Method
 

Preparation
  1. Preheat the oven to 400°F (200°C).
  2. In a skillet, cook the ground beef over medium heat until beautifully browned. Drain excess fat and stir in the taco seasoning.
  3. Brush one side of a tortilla lightly with olive oil and place that side down on your baking sheet.
  4. Spread a layer of refried beans on the tortilla, followed by seasoned ground beef and cheese.
  5. Place another tortilla on top, with the oiled side facing up.
Cooking
  1. Bake for 10-12 minutes or until the edges are golden and the cheese is melted and bubbly.
  2. Cut into wedges and serve warm with your choice of toppings.

Notes

Store leftovers in an airtight container in the fridge for up to three days. Reheat in the oven to keep the crust crispy. You can chop up leftover pizza and toss it into a salad for a crunchy, flavorful twist!
