Method
Preparation of Tortillas
- Preheat the oven to 375°F (190°C).
- Spray two baking sheets lightly with non-stick spray and lay 3 tortillas on each.
- Bake for 3 to 5 minutes, then flip and bake for another 2 to 5 minutes until golden and crispy.
Cooking the Beef
- In a large skillet over medium-high heat, cook the ground beef until browned and crumbled, then drain excess grease.
- Stir in taco seasoning and water, bring to a boil, then reduce heat to medium-low and simmer for about 10 minutes until thickened.
Assembling the Pizza
- Warm refried beans in a microwave-safe bowl for about 1 minute.
- Spread a layer of refried beans on a crispy tortilla, then add 1/3 of the seasoned beef mixture.
- Layer a second tortilla on top, spread 3 tablespoons of enchilada sauce, and top with cheeses, tomatoes, green onions, and olives.
- Repeat the process for remaining tortillas.
Final Cooking
- Return the assembled pizzas to the oven and bake for about 5 minutes until cheese is melted and bubbly.
- Let cool slightly, slice, and serve.
Notes
For quick preparation, use pre-cooked ground beef. If the cheese isn't melting well, cover with aluminum foil for a few minutes. For a twist, add corn or chopped peppers to the beef mixture.
