Homemade Mexican Pizza

A quick and easy homemade Mexican pizza, layered with savory seasoned beef, refried beans, and melty cheese on crispy tortillas.

Ingredients
  

For the beef mixture
  • 1 pound lean ground beef Ground turkey or chicken can be used as a lighter option.
  • 1 ounce taco seasoning Homemade option: mix chili powder, cumin, paprika, garlic powder, and onion powder.
  • 1/2 cup water
For the pizza assembly
  • 6 medium flour tortillas For gluten-free, use gluten-free tortillas.
  • 1 can refried beans Can substitute with black beans or pinto beans.
  • 1 can red enchilada sauce For spicier option, suggest green enchilada sauce or homemade salsa.
  • 1 cup shredded cheddar cheese
  • 1 cup shredded pepper-jack cheese Option to mix in mozzarella or Colby-Jack.
  • 1 each Roma tomato, diced
  • 1 each green onion, diced
  • 1 small can sliced black olives
  • to taste jalapeños or avocado slices Optional for extra flavor.

Method
 

Preparation of Tortillas
  1. Preheat the oven to 375°F (190°C).
  2. Spray two baking sheets lightly with non-stick spray and lay 3 tortillas on each.
  3. Bake for 3 to 5 minutes, then flip and bake for another 2 to 5 minutes until golden and crispy.
Cooking the Beef
  1. In a large skillet over medium-high heat, cook the ground beef until browned and crumbled, then drain excess grease.
  2. Stir in taco seasoning and water, bring to a boil, then reduce heat to medium-low and simmer for about 10 minutes until thickened.
Assembling the Pizza
  1. Warm refried beans in a microwave-safe bowl for about 1 minute.
  2. Spread a layer of refried beans on a crispy tortilla, then add 1/3 of the seasoned beef mixture.
  3. Layer a second tortilla on top, spread 3 tablespoons of enchilada sauce, and top with cheeses, tomatoes, green onions, and olives.
  4. Repeat the process for remaining tortillas.
Final Cooking
  1. Return the assembled pizzas to the oven and bake for about 5 minutes until cheese is melted and bubbly.
  2. Let cool slightly, slice, and serve.

Notes

For quick preparation, use pre-cooked ground beef. If the cheese isn't melting well, cover with aluminum foil for a few minutes. For a twist, add corn or chopped peppers to the beef mixture.
