  • 1 tablespoon fresh thyme, chopped

Preparation
  1. In a bowl, mix together the honey, butter, minced garlic, rosemary, thyme, salt, and pepper. Stir until the butter softens and everything looks glossy.
  2. Coat the lamb cutlets in the marinade, rubbing it into the meat. Let them marinate for at least 30 minutes.
  3. Preheat a skillet over medium-high heat. Add a tiny splash of oil.
Cooking
  1. Sear the marinated lamb cutlets for about 3–4 minutes on each side until a deep golden crust forms and the center is juicy.
  2. Serve immediately with your favorite sides.

Notes

For a smoky note, use browned butter. Adjust cook time for preferred doneness; medium-rare is recommended. Let cutlets rest for a couple of minutes before serving.
