Ingredients

For the Marinade
  • 2 tablespoons olive oil A smooth base that helps all the flavors come together.
  • 2 tablespoons reduced sodium soy sauce Gives that umami punch without overwhelming saltiness.
  • 1/4 cup honey The secret sweetness that balances the savory notes.
  • 2 cloves garlic (minced) Fresh garlic gives it that extra flavor boost, so don’t skimp!
  • 1/4 cup water Helps to dilute and distribute the flavors evenly.
For the Chicken
  • 1 lb boneless skinless chicken breasts Lean and ready to soak in all that deliciousness.

Method

Preparation
  1. Grab a freezer bag or your reusable silicone bag. Pour in the olive oil, soy sauce, honey, garlic, and water. Smoosh the bag with your hands until everything is well combined.
  2. Gently add the chicken breasts into the bag. Move the bag around to ensure that every inch of chicken is coated in that savory marinade.
  3. Pop that bag into the fridge and marinate for at least 2 hours, but if you can wait up to 24, it’s even better.
Cooking
  1. Preheat your oven to 425 degrees F.
  2. Place the marinated chicken in a shallow baking dish and bake for 10 minutes.
  3. Carefully flip the chicken over and bake for another 12 to 17 minutes, or until the internal temperature reaches 165 degrees F.
  4. Let the chicken rest at room temperature for 5 to 10 minutes before slicing.

Notes

You can marinate the chicken ahead of time and store it in the freezer. Just take it out the night before for a ready-to-go meal. If it tastes too salty, add a splash more honey to balance it out. For a refreshing twist, consider adding fresh ginger or lime juice to the marinade.
