Ingredients
  

Wet Ingredients
  • 1 cup butter, softened Use room temperature butter for better mixing.
  • 1 cup sugar
  • 2/3 cup brown sugar
  • 2 large eggs Ensure eggs are at room temperature.
  • 1 teaspoon vanilla extract
Dry Ingredients
  • 3 1/4 cups all-purpose flour Spoon and level for accuracy.
  • 4 packages hot cocoa mix Do NOT use sugar-free versions.
  • 1 teaspoon salt
  • 1 teaspoon baking soda
  • 2 teaspoons baking powder
Mix-Ins
  • 1 cup chocolate chips
  • 1 cup Mallow Bits (mini marshmallows)

Method
 

Preparation
  1. In a large bowl, beat the softened butter and sugars together using a standing mixer until the mixture is light and fluffy.
  2. Add the eggs and vanilla extract, mixing until everything is well combined.
  3. In a separate bowl, whisk together all the dry ingredients: flour, hot cocoa mix, salt, baking soda, and baking powder.
  4. Gradually mix the dry ingredients into the butter mixture until fully blended.
  5. Gently fold in the chocolate chips and Mallow Bits, creating a thick dough.
  6. Cover and chill the dough in the refrigerator for at least 30 minutes, or up to 24 hours for maximum flavor.
Baking
  1. Preheat your oven to 350°F.
  2. Scoop out 2 tablespoons of dough and place on baking sheets lined with silicone baking mats or parchment paper, ensuring they’re about 2 inches apart.
  3. Bake for 9 to 11 minutes or until the edges are lightly browned.
  4. Let cookies cool on the baking sheets for about 5 minutes before transferring to wire racks to cool completely.

Notes

Chill the dough for enhanced flavor and shape. Experiment with mix-ins like nuts or different cocoa mixes for variety.
