Preparation
- Preheat your oven to 350°F and spray a 13x9 glass baking dish with cooking spray.
- Place the biscuits in a single layer in the pan, gently pressing them up the sides.
- Bake for about 12-15 minutes, or until they are light brown.
- In a skillet, add the browned ground beef to the taco seasoning and let it simmer according to package instructions.
- In a separate bowl, mix together sour cream, mayonnaise, 4 ounces of shredded cheddar cheese, and half of the sliced onions until smooth.
- Sauté the remaining onions and bell pepper in the same pan used for the meat until tender.
Assembly and Baking
- On the baked biscuit crust, layer the taco meat, sliced tomatoes, sautéed onions and bell peppers, jalapeño peppers, the creamy sour cream mixture, and finally sprinkle over the remaining cheddar cheese.
- Bake uncovered for about 30-40 minutes, or until the edges are golden brown and the cheese is melting.
Notes
Time-saving trick: Use pre-cooked ground beef or leftovers to speed up the process. If the casserole looks watery after baking, let it rest to soak up moisture. Creative twist: Add black beans or corn for extra flavor.
