  • 2 pounds ground beef, browned and drained
  • 1 ounce packet taco seasoning plus water listed on the back
  • 16 ounce can large biscuits Use a brand of your choice.
  • 1/2 cup sour cream
  • 1/2 cup mayonnaise
  • 8 ounces cheddar cheese, shredded and divided Reserve half for topping.
  • 1 medium onion, halved and sliced Use fresh onions for best results.
  • 2 medium tomatoes, sliced Fresh tomatoes add sweetness.
  • 1 medium red bell pepper, halved and sliced
  • 4 ounces canned sliced Jalapeno peppers Adjust quantity to taste.

Method
 

Preparation
  1. Preheat your oven to 350°F and spray a 13x9 glass baking dish with cooking spray.
  2. Place the biscuits in a single layer in the pan, gently pressing them up the sides.
  3. Bake for about 12-15 minutes, or until they are light brown.
  4. In a skillet, add the browned ground beef to the taco seasoning and let it simmer according to package instructions.
  5. In a separate bowl, mix together sour cream, mayonnaise, 4 ounces of shredded cheddar cheese, and half of the sliced onions until smooth.
  6. Sauté the remaining onions and bell pepper in the same pan used for the meat until tender.
Assembly and Baking
  1. On the baked biscuit crust, layer the taco meat, sliced tomatoes, sautéed onions and bell peppers, jalapeño peppers, the creamy sour cream mixture, and finally sprinkle over the remaining cheddar cheese.
  2. Bake uncovered for about 30-40 minutes, or until the edges are golden brown and the cheese is melting.

Notes

Time-saving trick: Use pre-cooked ground beef or leftovers to speed up the process. If the casserole looks watery after baking, let it rest to soak up moisture. Creative twist: Add black beans or corn for extra flavor.
