Ingredients

For the Brownies
  • 1 cup unsalted butter Use unsalted butter so you can control the salt and let that lemony flavor shine!
  • 2 cups granulated sugar This adds the perfect sweetness to contrast with the tart lemon.
  • 4 large eggs Eggs act as the binder, giving the brownies that lovely structure.
  • 1 tablespoon lemon zest Fresh zest brings brightness and depth.
  • 1/2 cup freshly squeezed lemon juice You can't beat the fresh flavor; bottled just won't do!
  • 2 cups all-purpose flour Standard flour for that perfect chewy texture.
  • 1 teaspoon baking powder Gives the brownies a light lift.
  • 1/2 teaspoon salt Enhances all the exciting flavors.
For the Glaze
  • 1 cup powdered sugar A sweet finish to your Lemonies.
  • 2 tablespoons lemon juice Brightens up the glaze and ties it all together.

Method

Preparation
  1. Preheat your oven to 350°F (175°C). Grease a 9x13 inch baking pan.
  2. Melt the butter in a large bowl. Mix in the granulated sugar until well combined.
  3. Add the eggs, lemon zest, and lemon juice. Mix until combined.
  4. In another bowl, whisk together the flour, baking powder, and salt.
  5. Gradually add the dry ingredients to the wet mixture, mixing until just combined.
  6. Pour the batter into the prepared pan, spreading it evenly.
Baking
  1. Bake for 25-30 minutes, or until a toothpick comes out clean.
Glazing
  1. For the glaze, mix powdered sugar and lemon juice until smooth.
  2. Once the brownies are cool, drizzle the glaze over them and let it set.

Notes

Time-Saving Trick: Melt the butter in the microwave for speed! If your brownies seem too dry, try mixing less to avoid toughening them up. Add poppy seeds or fresh berries for added flavor.
