For the Lemon Loaf
  • 1.5 cups all-purpose flour
  • 1 teaspoon baking powder
  • 0.25 teaspoon baking soda
  • 0.25 teaspoon salt
  • 1 cup granulated sugar
  • 2 large eggs, room temperature
  • 0.5 cups vegetable oil or melted butter Choose your favorite for rich taste.
  • 0.5 cups sour cream or Greek yogurt Adds a lovely tanginess.
  • 2 tablespoons fresh lemon zest The more zest, the more flavor.
  • 0.25 cups fresh lemon juice Make sure it’s freshly squeezed for the best taste.
  • 1 teaspoon vanilla extract
For the Optional Lemon Glaze
  • 1 cup powdered sugar
  • 2-3 tablespoons fresh lemon juice

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C). Grease and line a loaf pan with parchment paper.
  2. In a medium bowl, whisk together the all-purpose flour, baking powder, baking soda, and salt until well combined.
  3. In a large mixing bowl, combine the sugar and eggs. Whisk them together until pale and slightly fluffy.
  4. Add in your choice of oil (or melted butter), sour cream, lemon zest, lemon juice, and vanilla extract. Mix until smooth.
  5. Gradually fold the dry ingredients into the wet ingredients using a spatula.
Baking
  1. Pour the batter into your prepared pan and bake for 45-55 minutes or until a toothpick comes out clean.
  2. Let it cool in the pan for about 10 minutes, then transfer it to a wire rack to cool completely.

Notes

Time-saving trick: Use a microplane for quick zesting. If you accidentally overmix, let the loaf rest for a few minutes before baking. Consider adding poppy seeds or lavender for a unique twist.
