Preparation
  1. Crumble the Little Debbie Christmas tree cakes into a large bowl.
  2. Add the softened cream cheese and vanilla (if using). Mix with a wooden spoon or your hands until the crumbs hold together. The mixture should be moist but firm.
  3. Scoop out small portions and roll into 1-inch balls, ensuring they are smooth and neat.
Coating
  1. Melt the white chocolate or candy melts in a microwave-safe bowl, heating in 20-second bursts and stirring until silky and smooth.
  2. Dip each truffle into the melted chocolate, coating it completely. Tap off excess and set on a parchment-lined baking sheet.
  3. If desired, sprinkle festive sprinkles on the truffles before the coating sets.
Chilling
  1. Refrigerate the truffles until firm, about 30–60 minutes.

Notes

Store in an airtight container in the fridge for up to 7 days. For freezing, place the truffles on a tray until firm, then transfer to a freezer bag for up to 3 months. Thaw in the fridge before serving. Consider rolling them in crushed peppermint or adding spices for a flavor twist.
