Ingredients
  

Main Ingredients
  • 3 lbs gold potatoes (may substitute russet) Peel if smooth texture is desired or leave skins for a rustic touch.
  • 1/2 cup salted butter Make sure butter is at room temperature for blending.
  • 1 cup whole milk Heat until warm but not boiling.
  • 1/2 teaspoon table salt or fine sea salt Add to taste.
  • 1/8 teaspoon freshly cracked black pepper Add to taste.
  • 1/4-1/3 cup full-fat sour cream Optional, for extra creaminess.
  • 1/2 cup freshly shredded parmesan cheese Optional, for a savory twist.

Method
 

Preparation
  1. Cut the butter into 8 pieces and set it out at room temperature while you prepare the potatoes.
  2. Peel the potatoes if you prefer them smooth. Cut them into 1½ inch pieces and rinse under cold water.
Cooking
  1. Place the potatoes in a large pot, fill it with cool water, and add salt; it should taste like the sea.
  2. Bring to a gentle boil over medium-high heat, stirring occasionally.
  3. While potatoes are cooking, heat the milk in a small pot until warm but not boiling.
  4. After about 10 minutes, the potatoes should be fork-tender. Drain and let them sit for 2 minutes.
  5. Mash the potatoes until smooth and fluffy using a masher or ricer.
Combining
  1. Scatter the softened butter over the warm potatoes and stir until melted.
  2. Gradually pour in the warmed milk, mixing until combined. Add salt, pepper, and any optional ingredients.
Serving
  1. Serve warm, ideally straight from the bowl, surrounded by loved ones.

Notes

Leftovers can be stored in an airtight container for up to 3 days. Reheat with a splash of milk to retain creaminess. Consider adding roasted garlic for an extra flavor boost.
