  • 1 drizzle Oil (for mixing) Extra virgin olive oil works wonderfully

Method

Preparation
  1. In a large bowl, take your minced meat and sprinkle in the seasonings. Add the oil, garlic, shallot, parsley, Worcestershire sauce, tomato paste, diluted bread crumbs, and grated cheese.
  2. Use your hands to mix all these ingredients together until well combined.
  3. Grab a handful of the mixture and roll it into balls, then gently flatten them into small patties.
Cooking
  1. Heat a mixture of oil and butter in your skillet over medium heat.
  2. When warm and shimmering, gently place the meatballs in the pan and fry until golden brown and cooked through, aiming for an internal temperature of 160°F/71°C.
  3. Towards the end of cooking, grate some extra cheese on top of the meatballs and cover the skillet briefly to let the cheese melt.

Notes

For a time-saving trick, mix the meatball mixture in the morning and let it chill in the fridge to meld flavors. If your meatballs fall apart, add more bread crumbs or an egg to bind. Try adding spinach or grated carrots for extra veggies.
