  • 4 pieces boneless, skinless chicken breasts
  • Salt and black pepper, to taste
  • 1 teaspoon smoked paprika
  • 1 tablespoon olive oil
  • 1 cup fresh blackberries Use fresh for best texture.
  • 1 piece jalapeño, thinly sliced Remove seeds for milder heat.
  • 1 cup mozzarella or Monterey Jack cheese, sliced or shredded Shred for quicker melt.
  • 1/4 cup chicken broth Use low-sodium for easier salt control.
  • 2 tablespoons honey
  • 1 tablespoon balsamic vinegar
  • 1 tablespoon butter
  • Chopped fresh parsley or cilantro, for garnish

Method
 

Preparation
  1. Slice a pocket into the side of each chicken breast and season inside and out with salt, pepper, and smoked paprika.
  2. Stuff each pocket with blackberries, jalapeño slices, and cheese; secure with toothpicks if needed.
Cooking
  1. Heat olive oil in a large skillet over medium-high heat; add chicken and sear until golden, about 4-5 minutes per side.
  2. Mix chicken broth, honey, and balsamic in a small cup; set aside.
  3. Reduce heat to medium and pour the broth-honey-balsamic mix into the skillet; add butter.
  4. Cover and simmer for 10-12 minutes; ensure chicken is fully cooked.
  5. Spoon the pan sauce over the chicken, sprinkle with chopped herbs, remove toothpicks, and serve immediately.

Notes

Great for weeknights or easy weekend company. Adjust heat by controlling jalapeño seeds.
