Ingredients
  

Meat Mixture
  • 1 pound ground beef (or ground turkey/chicken for a lighter option)
  • 1 packet taco seasoning (or 2 tablespoons homemade blend) Use store-bought for quick prep
  • cup water (for the meat mixture)
Tortillas
  • 8 small flour tortillas (6-inch size)
Beans
  • 1 can refried beans (15 oz)
  • ¼ cup water (to thin the beans)
Sauce & Toppings
  • 1 cup red enchilada sauce or mild taco sauce
  • 2 cups shredded Mexican blend cheese (or cheddar/monterey jack)
  • ½ cup diced tomatoes
  • ¼ cup sliced green onions
  • ¼ cup sliced black olives (optional)
Frying
  • Oil for frying tortillas (or cooking spray if baking) Crispy edges make everything better!

Method
 

Preparation
  1. In a skillet, cook the ground beef over medium heat until browned and cooked through. Drain any excess fat.
  2. Sprinkle in the taco seasoning and pour in ⅔ cup of water. Let it simmer for about 5 minutes until the mixture thickens.
  3. Meanwhile, in a small saucepan, combine the refried beans with ¼ cup of water and heat on low until warm and spreadable.
  4. Heat 2-3 tablespoons of oil in a skillet. Fry each tortilla until golden and crisp, about 1-2 minutes on each side. Drain on paper towels.
Assembly
  1. Spread a generous layer of warm refried beans on 4 crispy tortillas, then top with the seasoned beef mixture.
  2. Place another tortilla on each meat layer to create a hearty sandwich.
  3. Pour enchilada sauce over the top tortillas, then sprinkle with cheese.
  4. Add diced tomatoes, green onions, and black olives if desired.
  5. Optionally place under the broiler for a minute or two until the cheese is bubbly and golden.
Serving
  1. Slice and serve hot.

Notes

Use fresh ingredients for the best flavor. Overfilling tortillas can lead to messy pizzas; stick to a moderate amount of each ingredient. You can freeze the cooked pizzas wrapped tightly in foil for up to 2 months. Reheat at 350°F until warmed through.
