Method
Preparation
- In a skillet, cook the ground beef over medium heat until browned and cooked through. Drain any excess fat.
- Sprinkle in the taco seasoning and pour in ⅔ cup of water. Let it simmer for about 5 minutes until the mixture thickens.
- Meanwhile, in a small saucepan, combine the refried beans with ¼ cup of water and heat on low until warm and spreadable.
- Heat 2-3 tablespoons of oil in a skillet. Fry each tortilla until golden and crisp, about 1-2 minutes on each side. Drain on paper towels.
Assembly
- Spread a generous layer of warm refried beans on 4 crispy tortillas, then top with the seasoned beef mixture.
- Place another tortilla on each meat layer to create a hearty sandwich.
- Pour enchilada sauce over the top tortillas, then sprinkle with cheese.
- Add diced tomatoes, green onions, and black olives if desired.
- Optionally place under the broiler for a minute or two until the cheese is bubbly and golden.
Serving
- Slice and serve hot.
Notes
Use fresh ingredients for the best flavor. Overfilling tortillas can lead to messy pizzas; stick to a moderate amount of each ingredient. You can freeze the cooked pizzas wrapped tightly in foil for up to 2 months. Reheat at 350°F until warmed through.
